Flavours to Savour

Fish is a local staple and bought at the nearby fish markets in Gallipoli. Other ingredients that feature on the weekly menu include local cheese such as fresh ricotta, burrata and mozzarella. Whilst the local alimentari supply fresh vegetables, pulses and herbs.


Simple Italian dishes that you will be able to cook at home include: zuppa di pesce (fish soup), taiedda con riso, cozze e patate (mussel bake), braciole al sugo (veal parcels stuffed with pecorino and parsley in a fresh tomato sauce), pure di fave e cicoria (broad bean puree and chicory mash) as well as the delicious crostata con cotognata (quince tart).
